You can change to a new theme on your Ubuntu desktop by opening the appearance Preferences window and selecting the Theme tab. Clicking on a thumbnail will automatically apply that theme so you can see what it looks/feels like.

Users can use the "Get more themes online" to access just that, themes at Gnome.org. The buttons across the bottom let users Delete themes, Save themes as a filename, customize themes and install new themes (downloaded from the internet).

If you select Customize you can edit your theme using the following tabs.

Window Borders

Icons

Pointers

Make sure if you take the time to edit a theme that you click on the Save As button and save your theme for future use.
